Recipe: Spicy Penne Pasta

This recipe is based on one I found in a magazine a few years ago. It’s so easy and cheap to make, but it tastes expensive and delicious! The spice is enough to make your tongue tingle, but not too overwhelming!

Spicy Penne Pasta
Ingredients:
3/4 lb penne pasta
salt
2 Tbs olive oil
2 garlic cloves, minced
1/2 tsp red pepper flakes
1 (14-oz.) can diced tomatoes
1/4 C Parmesan cheese

Yield: 2 servings

Directions:

In a pot, bring your water to a boil and salt well. Add the penne and cook according the directions on the pasta’s box.

In a skillet, heat the olive oil over medium heat. Add the garlic and red pepper. Stir constantly for about 30 seconds.

Add the can of tomatoes to the skillet and simmer about 10 minutes. Salt to taste.

Once the pasta is done, drain it and add the tomato sauce to the pasta, tossing to coat.

Sprinkle the parmesan cheese on top.

SPICY PENNE PASTA
Ingredients:
3/4 lb penne pasta
salt
2 Tbs olive oil

1 (14-oz.) can diced tomatoes
1/4 C Parmesan cheese

Directions:
1. Cook penne according to package directions. Drain and set aside.
2. In a skillet, heat olive oil over medium heat. Add the garlic and red pepper. Cook, stirring constantly, for 30 seconds.
3. Add the can of tomatoes and simmer about 10 minutes. Salt to taste.
4. Add the tomato sauce to the pasta and toss to coat.
5. Sprinkle parmesan cheese on top.
