Recipe: Easy Chicken Casserole

When it comes to meals in West Virginia, we are all about homestyle comfort food! I think it’s safe to say that most of us West Virginians would prefer a home cooked meal complete with vegetables fresh from our family’s garden over a restaurant prepared meal any day! Chicken casserole is no stranger to the common West Virginia dinner table. I put together this recipe as kind of a combination of other chicken casserole recipes I’ve seen in cookbooks. It’s super easy and a nice quick meal to prepare on a whim!

Ingredients:
2 boneless, skinless chicken breasts
1 tsp olive oil
2 cans cream of chicken soup
1/2 C milk
1 box Stove Top stuffing

Directions:
Cube the chicken. Heat oil over medium heat in a saucepan. Add chicken and cook thoroughly. Spread in a 13×9 inch baking dish.

Mix the soup and milk in a saucepan and heat to boiling. Pour over chicken.

Fix the stuffing according to the directions on the box and spread over chicken.

Bake at 350 degrees F for 20 minutes or until bubbly.

Mmm… I served with fresh green beans, homemade macaroni & cheese, and mashed potatoes! That is a West Virginia comfort meal, right there! Delicious!
