Recipe: Chicken Parmigiana

It’s no secret–we West Virginians love food and we love to eat! Most of us grow up with homemade dinners every day and big Sunday dinners with our families. In my hometown, the closest fast food restaurant is about a 20 minute drive away. So, today, I’d like to share one of my family’s favorite recipes: my dad’s chicken parmigiana! We love Italian food! And if there is one thing West Virginians and Italians have in common, it’s our appreciation of a nice meal!

Ingredients:
4 boneless, skinless chicken breast halves (I used chicken tenders)
2 eggs, beaten
1 tsp. garlic powder
1/2 C Italian style breadcrumbs
1/4 C olive oil
1 large clove garlic, chopped
1 (15 1/2 ounce) jar meat flavored spaghetti sauce
1/2 C grated Parmesan cheese
1 C shredded Mozzarella cheese

Preheat your oven to 400 degrees Fahrenheit. Pound the chicken breasts to tenderize.
Mix the garlic powder with the breadcrumbs. Dip the chicken in the beaten eggs and then into the bread crumb mixture.

Heat the olive oil in a skillet over medium heat. Add the chopped garlic to the oil. Cook for about a minute, careful not to burn the garlic! Add chicken to oil and brown each side.

Pour spaghetti sauce into a 13 x 9 inch baking dish. Place browned chicken breasts on sauce and top with cheeses.

Bake for 15 minutes or until cheese is melted and lightly browned.

Serve on top of spaghetti with a side of garlic bread and enjoy! Yum!

CHICKEN PARMIGIANA

3. Dip chicken in beaten eggs and roll them in the breadcrumbs mixed with garlic powder.
4. Heat oil over medium heat. Add the chopped garlic to the oil. Cook for about a minute (do not burn garlic). Add chicken to oil and brown each side.
5. Pour spaghetti sauce into a 13 x 9 inch baking dish. Place browned chicken breasts on sauce and top with cheeses.
6. Bake for 15 minutes or until cheese is melted and lightly browned.
